Curry-Spiced Lentil Soup

Ingredients:
1 cup red lentils, rinsed
1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon SuperSpice curry powder
½ teaspoon SuperSpice cayenne pepper (optional for heat)
4 cups vegetable stock
1 cup coconut milk
1 medium carrot, diced
Salt and pepper, to taste
Instructions:
Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft and fragrant.
Add spices: Stir in the SuperSpice curry powder and cayenne pepper (if using). Cook for 1 minute to release the flavours.
Simmer: Add the lentils, vegetable broth, carrot, salt and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
Add coconut milk: Stir in the coconut milk and simmer for an additional 5 minutes. Adjust seasoning as needed.
Serve: Ladle the soup into bowls and garnish with fresh coriander or a squeeze of lime.
