Paprika and Chilli Eggs
Ingredients:
4 large eggs
1 tablespoon olive oil
1/2 cup diced bell peppers (any color)
1/4 cup diced red onion
1 clove garlic, minced
1 teaspoon SuperSpice paprika
1/2 teaspoon SuperSpice chili powder
Salt and pepper to taste
Fresh parsley for garnish
Crusty bread or tortillas for serving
Instructions:
Heat olive oil in a non-stick skillet over medium heat.
Add diced bell peppers and red onion to the skillet. Sauté until they are softened, about 3-4 minutes.
Stir in minced garlic, SuperSpice paprika, and SuperSpice chili powder. Cook for an additional 1-2 minutes, allowing the spices to infuse into the vegetables.
Create small wells in the vegetable mixture and crack the eggs into each well. Season the eggs with salt and pepper.
Cover the skillet and let the eggs cook until the whites are set but the yolks are still runny, approximately 3-4 minutes for a sunny-side-up style.
Sprinkle fresh parsley over the eggs for a burst of freshness. Serve the paprika and chili eggs hot with crusty bread or tortillas on the side.
